Sodexo is seeking an experienced Executive Chef 1 to oversee the Culinary Operations at Central Oregon Community College - located in the high end community of Bend in Central Oregon. The campus is primarily a commuter campus that serves up to 7,000 students with a main full service servery and a full service coffee shop/bistro. The new residence hall houses over 300 on campus resident students that are served Sunday – Saturday. The Café and Market were updated last year and there are plans this fall to add a café on the upper campus that will focus on local/sustainable products. Expectations for food quality / variety and catering are very high in this community. The Executive Chef 1 must possess a high level of culinary and catering skills.

We are looking for candidates who will:

  • manage the daily food production including production planning and controls;

  • ensure Sodexo Culinary Standards including recipe compliance and food quality;

  • manage food costing, controls and compliance;

  • develop menus and manage inventory;

  • have high expectations for customer service and quality of food;

  • have the ability and willingness to develop and train frontline employees;

  • have a passion for food and innovation;

  • have knowledge of special diets and allergens; and

  • knowledge of Sodexo Food Management System (FMS) is preferred.

The ideal candidate has:

  • a strong culinary background, with the demonstrated ability to stay current with new culinary trends, with previous experience working in a high volume facility;

  • Hands-on management approach, comfortable communication style and strong team building skills as the successful candidate will interact with students, staff, faculty, client, and hourly employees.

  • Successful experience partnering with a client in involvement / commitment to the campus and surrounding community on sustainability initiatives, focusing on local vendors and products, food recycling, food recovery and food co-ops.

  • Proven Leadership, Culinary knowledge, and pride in presentation and quality of high volume food production, maintaining standards of quality, cost and taste.

  • Strong background in catering - ability to elevate level of catering – both high volume events as well as high profile – Board meetings, holiday events, Presidential events.

  • Understanding of the locally sourced products, local vendors, and businesses in the Bend, OR area.

Position Summary

Provides culinary leadership within a small sized unit including menu planning, program execution and staff management & training. Works directly with internal and external clients managing the catering process from beginning through execution

Key Duties

-Executes the culinary function

-Customer & Client satisfaction

-Manages food & physical safety program.

Qualifications & Requirements

Basic Education Requirement - Associate's Degree

Basic Management Experience - 2 years

Basic Functional Experience – 1 year work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
